- 1 Apple or pear
- 2 Avocados
- 1 tsp Chili flakes
- 1/4 tsp Chipotle powder
- 2 cups Curly endive
- 2 cups Pomegranate seeds
- 6 cups Assorted salad greens
- 2 tsp Orange zest
- 2 tsp Dijon mustard
- 1 tbsp Fig preserves
- 2 tbsp Honey
- 1/3 cup Honey or pure maple syrup
- Freshly ground black pepper
- Kosher salt
- 1/4 cup Balsamic vinegar or apple cider vinegar
- 1/3 cup Extra-virgin olive oil
- 1/2 cup Pumpkin seeds
- 1 1/2 cups Raw walnut halves
- 2 tbsp Orange juice
- 1 cup Blue cheese
Instructions
- In a large bowl, combine the curly endive and assorted salad greens.
- Add diced apple or pear and sliced avocados to the salad mix.
- Sprinkle in pomegranate seeds, pumpkin seeds, and walnut halves.
- In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, fig preserves, honey, orange juice, orange zest, chipotle powder, chili flakes, salt, and black pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with crumbled blue cheese before serving.
- Serve immediately and enjoy your festive salad!
