Description

A refreshing cocktail that combines cool mint, creamy coconut, and tangy lime, perfect for holiday celebrations.


Ingredients

  • 1/4 cup packed mint
  • 1 cup canned coconut milk
  • 3/4 cup lime juice
  • 1/2 cup sugar
  • 1/2 cup coconut rum
  • 1/2 cup white rum
  • 1 pomegranate arils
  • Sparkling water

Instructions

  1. In a pitcher, muddle the mint leaves with the sugar to release the mint’s aroma.
  2. Add the coconut milk, lime juice, coconut rum, and white rum to the pitcher and stir well until the sugar is dissolved.
  3. Fill glasses with ice and pour the mojito mixture over the ice.
  4. Top each glass with sparkling water and garnish with pomegranate arils.
  5. Serve immediately.

Notes

For best freshness, serve cold and enjoy within the first day of preparation. Avoid freezing the drink, but you can freeze the mixture (without sparkling water) for later use as a slushy treat.
