White Chocolate Rice Krispie Balls

Description

A festive twist on traditional Rice Krispie treats, these White Chocolate Rice Krispie Balls are perfect for any occasion and are fun to make with friends and family.


Ingredients

Scale
  • 3 cups Puffed rice cereal
  • 1 tsp Vanilla extract
  • 1 tbsp Coconut oil
  • 4 tbsp Butter, unsalted
  • 1 1/2 cups Mini marshmallows
  • 1/2 cup Nonpareils (red, green, and white)
  • 2 cups White chocolate chips or white chocolate candy melts

Instructions

  1. In a large saucepan, melt the butter and coconut oil over low heat.
  2. Once melted, add the mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and add the vanilla extract.
  4. Stir in the puffed rice cereal until well coated.
  5. Allow the mixture to cool slightly, then grease your hands with a bit of oil and shape the mixture into small balls.
  6. Roll the balls in nonpareils to coat.
  7. Melt the white chocolate chips or candy melts in a microwave-safe bowl, then dip the balls into the melted chocolate.
  8. Allow to set on a parchment-lined baking sheet until the chocolate hardens.

Notes

For best results, serve at room temperature or slightly chilled. Store in an airtight container for up to 2 weeks.
