Ingredients

  • 2 tbsp Lemon, zest
  • 3 Eggs, large
  • 1/2 cup Lemon juice, fresh
  • 1/2 tsp Cornstarch
  • 1/2 tsp Cream of tartar
  • 1 1/2 cup Granulated sugar
  • 1/4 tsp Salt
  • 1 1/4 tsp Vanilla
  • 1 1/2 cups Graham cracker crumbs
  • 3 packages (8 oz each) cream cheese
  • 1/2 cup Butter, unsalted
  • 1/4 cup Heavy cream
  • 1/4 cup Sour cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and beat until fluffy. Mix in sour cream, vanilla, lemon juice, and lemon zest until combined.
  4. Add eggs one at a time, mixing well after each addition. Pour the cheesecake mixture into the cooled crust.
  5. Bake for 50-60 minutes until the edges are set but the center is slightly jiggly. Turn off the oven and crack the door open, letting it cool in the oven for 1 hour.
  6. In a separate bowl, beat the egg whites with cream of tartar and salt until soft peaks form. Gradually add granulated sugar and continue to beat until stiff peaks form.
  7. Spread the meringue over the cooled cheesecake and bake at 350°F (175°C) for 10-15 minutes until lightly golden.
  8. Let the cheesecake cool completely in the pan. Chill in the refrigerator for at least 4 hours before serving.

Notes

Allow ingredients to come to room temperature for best results. Use fresh lemons for a better flavor.
