Ingredients

- 1 tsp Lemon zest
- 1 large Egg
- 1 cup All-purpose flour
- 1/2 cup Mini chocolate chips
- 1/2 cup Granulated sugar
- 1 cup Powdered sugar
- 1 tsp Vanilla extract
- 1/2 cup Pistachios
- 1/2 cup Ricotta cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the ricotta cheese, granulated sugar, and lemon zest until smooth.
- Add the egg and vanilla extract to the mixture and mix well.
- Gradually add the flour and stir until just combined.
- Fold in mini chocolate chips and chopped pistachios.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Allow cookies to cool, then dust with powdered sugar before serving.
