A fun and refreshing twist on a classic dessert, these Strawberry Crunch Cheesecake Tacos combine creamy cheesecake and sweet strawberries in a crunchy shell.

- 1 cup Strawberries
- 1/2 cup Granulated sugar
- 1/4 cup Powdered sugar
- 1 tsp Vanilla extract
- 1 tbsp Vegetable oil
- 6 small Flour tortillas
- 1 cup Graham crackers, crushed
- 2 tbsp Butter, unsalted, melted
- 1 cup Cream cheese, softened
- 1 cup Heavy cream, whipped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the crushed graham crackers, melted butter, and vegetable oil.
- Press this mixture into the bottom of taco molds and bake for 8-10 minutes until golden.
- In a separate bowl, mix together the softened cream cheese, granulated sugar, powdered sugar, vanilla extract, and whipped heavy cream until smooth and well combined.
- Wash and chop the strawberries, then fold them gently into the cream cheese mixture.
- Once the taco shells have cooled, fill each shell with the cream cheese and strawberry mixture.
- Top with extra strawberries if desired, and serve cold.
