Description

A fun and refreshing twist on a classic dessert, these Strawberry Crunch Cheesecake Tacos combine creamy cheesecake and sweet strawberries in a crunchy shell.


Ingredients

  • 1 cup Strawberries
  • 1/2 cup Granulated sugar
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Vegetable oil
  • 6 small Flour tortillas
  • 1 cup Graham crackers, crushed
  • 2 tbsp Butter, unsalted, melted
  • 1 cup Cream cheese, softened
  • 1 cup Heavy cream, whipped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the crushed graham crackers, melted butter, and vegetable oil.
  3. Press this mixture into the bottom of taco molds and bake for 8-10 minutes until golden.
  4. In a separate bowl, mix together the softened cream cheese, granulated sugar, powdered sugar, vanilla extract, and whipped heavy cream until smooth and well combined.
  5. Wash and chop the strawberries, then fold them gently into the cream cheese mixture.
  6. Once the taco shells have cooled, fill each shell with the cream cheese and strawberry mixture.
  7. Top with extra strawberries if desired, and serve cold.
