A delightful cake that combines fluffy layers with raspberry preserves and sweetened coconut, resembling a snowball.

- 3 large Eggs
- 1/2 cup Raspberry preserves
- 2 1/2 cups All-purpose flour
- 1 1/2 tsp Baking powder
- 1 1/2 cups Granulated sugar
- 1 cup Powdered sugar
- 1/2 tsp Salt
- 1 tbsp Vanilla extract
- 2 cups Sweetened coconut
- 3/4 cup Unsalted butter
- 1 cup Whole milk
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Cream together the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry mixture to the creamed mixture, alternating with the whole milk until just combined.
- Gently fold in the raspberry preserves.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
- Once cooled, spread a layer of raspberry preserves between the cake layers and coat the outside with powdered sugar and sweetened coconut.
- Slice and serve the Snowball Cake.
Notes
For a delightful presentation, sprinkle extra sweetened coconut on the plate beside each slice. Serve with a cup of coffee or milk.
