- 3 lbs Beef chuck roast
- 4 Carrots, chopped
- 1 1/2 cups Cranberries, whole fresh or frozen
- 4 Garlic cloves, minced
- 4 sprigs Thyme, fresh
- 1 Yellow onion, large, chopped
- 2 cups Beef broth
- 1/2 cup Balsamic vinegar
- 1 tsp Black pepper
- 3 tbsp Brown sugar
- 1 1/2 tsp Salt
- 2 tbsp Olive oil
Instructions
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the beef chuck roast with salt and pepper, then sear it in the Dutch oven until browned on all sides.
- Remove the roast and set aside.
- In the same pot, add chopped onions, carrots, and minced garlic; sauté until softened.
- Return the roast to the pot, add cranberries, thyme, beef broth, balsamic vinegar, and brown sugar.
- Bring to a simmer, cover, and transfer to the preheated oven.
- Braise for approximately 3 hours or until the meat is fork-tender.
- Serve warm with pan juices drizzled over the top.
