Ingredients

  • 3 lbs Beef chuck roast
  • 4 Carrots, chopped
  • 1 1/2 cups Cranberries, whole fresh or frozen
  • 4 Garlic cloves, minced
  • 4 sprigs Thyme, fresh
  • 1 Yellow onion, large, chopped
  • 2 cups Beef broth
  • 1/2 cup Balsamic vinegar
  • 1 tsp Black pepper
  • 3 tbsp Brown sugar
  • 1 1/2 tsp Salt
  • 2 tbsp Olive oil

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef chuck roast with salt and pepper, then sear it in the Dutch oven until browned on all sides.
  4. Remove the roast and set aside.
  5. In the same pot, add chopped onions, carrots, and minced garlic; sauté until softened.
  6. Return the roast to the pot, add cranberries, thyme, beef broth, balsamic vinegar, and brown sugar.
  7. Bring to a simmer, cover, and transfer to the preheated oven.
  8. Braise for approximately 3 hours or until the meat is fork-tender.
  9. Serve warm with pan juices drizzled over the top.
