Ingredients

  • 30 Caramels
  • 4 oz Milk or dark chocolate
  • 2 cups Coconut flakes
  • 1 11.2 oz box Keebler shortbread sandies
  • 3/4 block 6 oz cream cheese
  • 1/4 cup Heavy cream

Instructions

  1. Start by melting the caramels and mixing them with the cream cheese and heavy cream until smooth.
  2. In a separate bowl, crush the shortbread sandies into fine crumbs.
  3. Mix the crushed cookies into the caramel mixture until well combined.
  4. Form the mixture into small balls and roll them in coconut flakes.
  5. Melt the chocolate and dip each truffle into it, ensuring they are fully coated.
  6. Place the truffles on a lined baking sheet to cool and set.
