Ingredients

- 8 oz cream cheese or coconut butter
- 1 cup chocolate chips or broken-up chocolate
- 2 tbsp instant coffee
- 4 tbsp butter
- 1 cup powdered sugar or erythritol
Instructions
- In a mixing bowl, combine the cream cheese (or coconut butter) and butter until smooth.
- Melt the chocolate chips in a microwave or over a double boiler.
- Once melted, mix the chocolate into the cream cheese mixture along with the instant coffee and powdered sugar (or erythritol).
- Thoroughly blend until all ingredients are combined.
- Refrigerate the mixture for about 30 minutes to firm up.
- Once firm, scoop out small portions and roll them into balls.
- Roll the truffles in cocoa powder, crushed nuts, or more powdered sugar if desired.
- Place the truffles in the fridge to set completely before serving.
Notes
Store truffles in an airtight container. They last up to 2 weeks in the refrigerator and can be frozen for up to 3 months.
