Description

A rich and creamy appetizer combining whipped feta with the vibrant flavors of pomegranate and pistachios.


Ingredients

  • 2 tbsp fresh mint leaves
  • 1/4 cup pomegranate arils
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 2 tbsp extra-virgin olive oil
  • 1/4 cup unsalted pistachios
  • 4 oz cream cheese
  • 1 (8 oz) block feta cheese

Instructions

  1. In a mixing bowl, combine the cream cheese and feta cheese, and whip until smooth and creamy.
  2. Add in the honey, lemon juice, and extra-virgin olive oil, and mix until well combined.
  3. Season with salt and freshly ground black pepper to taste.
  4. Carefully fold in the pomegranate arils, chopped fresh mint, and crushed pistachios.
  5. Transfer the whipped feta to a serving dish and garnish with additional pomegranate arils and pistachios if desired.
  6. Serve with crackers or fresh vegetables.

Notes

Serve at room temperature for best flavor. Store leftovers in an airtight container.
