A rich and creamy appetizer combining whipped feta with the vibrant flavors of pomegranate and pistachios.
Ingredients

- 2 tbsp fresh mint leaves
- 1/4 cup pomegranate arils
- 1 tbsp honey
- 2 tbsp fresh lemon juice
- Salt and freshly ground black pepper to taste
- 2 tbsp extra-virgin olive oil
- 1/4 cup unsalted pistachios
- 4 oz cream cheese
- 1 (8 oz) block feta cheese
Instructions
- In a mixing bowl, combine the cream cheese and feta cheese, and whip until smooth and creamy.
- Add in the honey, lemon juice, and extra-virgin olive oil, and mix until well combined.
- Season with salt and freshly ground black pepper to taste.
- Carefully fold in the pomegranate arils, chopped fresh mint, and crushed pistachios.
- Transfer the whipped feta to a serving dish and garnish with additional pomegranate arils and pistachios if desired.
- Serve with crackers or fresh vegetables.
Notes
Serve at room temperature for best flavor. Store leftovers in an airtight container.
