Ingredients

  • 2 Avocados
  • 1 tsp Chili flakes
  • 1/4 tsp Chipotle powder
  • 2 cups Curly endive
  • 2 cups Pomegranate seeds
  • 6 cups Assorted salad greens
  • 2 tsp Orange zest
  • 2 tsp Dijon mustard
  • 1 tbsp Fig preserves
  • 2 tbsp Honey
  • 1/3 cup Honey or pure maple syrup
  • Freshly ground black pepper to taste
  • Kosher salt to taste
  • 1/4 cup Balsamic vinegar or apple cider vinegar
  • 1/3 cup Extra virgin olive oil
  • 1/2 cup Pumpkin seeds
  • 1 1/2 cups Raw walnut halves
  • 2 tbsp Orange juice
  • 1 cup Blue cheese

Instructions

  1. In a large bowl, combine the assorted salad greens, curly endive, pomegranate seeds, diced apple or pear, diced avocados, and pumpkin seeds.
  2. In a separate bowl, whisk together the balsamic vinegar, honey, fig preserves, Dijon mustard, chipotle powder, chili flakes, orange juice, orange zest, salt, and pepper.
  3. Slowly drizzle in the extra virgin olive oil while whisking until the dressing is well combined and emulsified.
  4. Pour the dressing over the salad and toss gently to combine everything.
  5. Top with raw walnut halves and crumbled blue cheese before serving. Enjoy your festive salad!
