- 1 Apple or pear
- 2 Avocados
- 1 tsp Chili flakes
- 1/4 tsp Chipotle powder
- 2 cups Curly endive
- 2 cups Pomegranate seeds
- 6 cups Assorted salad greens
- 2 tsp Orange zest
- 2 tsp Dijon mustard
- 1 tbsp Fig preserves
- 2 tbsp Honey
- 1/3 cup Honey or pure maple syrup
- Freshly ground black pepper to taste
- Kosher salt to taste
- 1/4 cup Balsamic vinegar or apple cider vinegar
- 1/3 cup Extra virgin olive oil
- 1/2 cup Pumpkin seeds
- 1 1/2 cups Raw walnut halves
- 2 tbsp Orange juice
- 1 cup Blue cheese
Instructions
- In a large bowl, combine the assorted salad greens, curly endive, pomegranate seeds, diced apple or pear, diced avocados, and pumpkin seeds.
- In a separate bowl, whisk together the balsamic vinegar, honey, fig preserves, Dijon mustard, chipotle powder, chili flakes, orange juice, orange zest, salt, and pepper.
- Slowly drizzle in the extra virgin olive oil while whisking until the dressing is well combined and emulsified.
- Pour the dressing over the salad and toss gently to combine everything.
- Top with raw walnut halves and crumbled blue cheese before serving. Enjoy your festive salad!
