Ingredients

  • 1 cup Brown sugar, packed
  • 1 tbsp Coconut oil or shortening
  • 1 pinch Salt
  • 1 tsp Vanilla extract, pure
  • 2 cups Pecans, chopped
  • 1 cup Graham cracker crumbs
  • 2 cups Chocolate chips or melting wafers

Instructions

  1. In a large bowl, combine corn syrup, brown sugar, coconut oil, salt, and vanilla extract until smooth.
  2. Stir in the chopped pecans and graham cracker crumbs until fully incorporated.
  3. Chill the mixture in the refrigerator for about 30 minutes until firm.
  4. Once chilled, scoop out small portions and roll them into balls.
  5. Melt the chocolate chips or melting wafers in a microwave-safe bowl.
  6. Dip each ball into the melted chocolate, ensuring they are fully coated.
  7. Place them on a baking sheet lined with parchment paper.
  8. Let the chocolate set before serving. Enjoy!
