  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 cup Cocoa powder
  • 1 cup Granulated sugar
  • 2 drops Pink food coloring
  • 1/2 cup Powdered sugar
  • 1/2 teaspoon Salt
  • 2 teaspoons Vanilla
  • 2 cups Coconut, sweetened or unsweetened
  • 1/2 cup unsalted Butter
  • 1/2 cup Buttermilk
  • 8 oz Cream cheese
  • 1 1/2 cups Heavy whipping cream
  • 1 tablespoon Milk
  • 1/2 cup hot Water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix the eggs, sugar, pink food coloring, and butter until creamy.
  3. In another bowl, combine the flour, baking powder, baking soda, cocoa powder, and salt.
  4. Gradually add the dry ingredients to the egg mixture along with the buttermilk and hot water. Mix until smooth.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let the cake cool completely.
  7. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Fold in the whipped cream until combined.
  8. Spread the cream cheese mixture over the cooled cake and top with the sweetened coconut.
  9. Chill in the refrigerator for at least an hour before cutting into bars and serving.

Notes

For a richer flavor, opt for sweetened coconut. Allowing the bars to chill helps enhance their flavor and makes them easier to cut.
