- 2 large Eggs
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1/2 cup Cocoa powder
- 1 cup Granulated sugar
- 2 drops Pink food coloring
- 1/2 cup Powdered sugar
- 1/2 teaspoon Salt
- 2 teaspoons Vanilla
- 2 cups Coconut, sweetened or unsweetened
- 1/2 cup unsalted Butter
- 1/2 cup Buttermilk
- 8 oz Cream cheese
- 1 1/2 cups Heavy whipping cream
- 1 tablespoon Milk
- 1/2 cup hot Water
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a bowl, mix the eggs, sugar, pink food coloring, and butter until creamy.
- In another bowl, combine the flour, baking powder, baking soda, cocoa powder, and salt.
- Gradually add the dry ingredients to the egg mixture along with the buttermilk and hot water. Mix until smooth.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Fold in the whipped cream until combined.
- Spread the cream cheese mixture over the cooled cake and top with the sweetened coconut.
- Chill in the refrigerator for at least an hour before cutting into bars and serving.
Notes
For a richer flavor, opt for sweetened coconut. Allowing the bars to chill helps enhance their flavor and makes them easier to cut.
