Description

Delicious and comforting muffins that combine rich chocolate flavor with a refreshing hint of peppermint, perfect for cozy gatherings.


Ingredients

  • 2 large Eggs
  • 1 1/2 cups All purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 cup Unsweetened cocoa powder
  • 1 cup Granulated sugar
  • 1 tsp Peppermint extract
  • 1 cup Powdered sugar
  • 1/2 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1 tsp Vanilla extract
  • 1/2 cup Vegetable oil
  • 1 cup Buttermilk
  • 2 tbsp Milk
  • 1 Candy cane

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cocoa powder, granulated sugar, and salt.
  3. In another bowl, beat the eggs and then mix in the vegetable oil, buttermilk, peppermint extract, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing.
  5. Fold in the semi-sweet chocolate chips.
  6. Divide the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Crush the candy cane and sprinkle a little on top of each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, you can dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. Consider adding whipped cream and crushed candy canes for a festive touch.
