- 2 large Eggs
- 1 1/2 cups All purpose flour
- 1 tbsp Baking powder
- 1/2 tsp Baking soda
- 1/2 cup Unsweetened cocoa powder
- 1 cup Granulated sugar
- 1 tsp Peppermint extract
- 1 cup Powdered sugar
- 1/2 tsp Salt
- 1/2 cup Semi-sweet chocolate chips
- 1 tsp Vanilla extract
- 1/2 cup Vegetable oil
- 1 cup Buttermilk
- 2 tbsp Milk
- 1 Candy cane
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, cocoa powder, granulated sugar, and salt.
- In another bowl, beat the eggs and then mix in the vegetable oil, buttermilk, peppermint extract, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing.
- Fold in the semi-sweet chocolate chips.
- Divide the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Crush the candy cane and sprinkle a little on top of each muffin.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, you can dust with powdered sugar before serving.
Notes
Serve warm or at room temperature. Consider adding whipped cream and crushed candy canes for a festive touch.
