Description

Delightful mini cakes filled with dried fruits and warm spices, perfect for the festive season.


Ingredients

  • 115 g Dried fruit, mixed
  • 3 large Eggs
  • 175 g Self-raising flour
  • 2 tsp Ground mixed spice
  • 175 g Light brown soft Sugar
  • 2 tbsp Brandy or orange juice
  • 175 g Butter

Instructions

  1. Preheat the oven to 160°C (140°C fan)/320°F. Grease and line the mini cake tins.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one by one, mixing well after each addition.
  4. Fold in the self-raising flour and mixed spices.
  5. Stir in the dried fruit and brandy (or orange juice).
  6. Divide the mixture evenly among the prepared cake tins.
  7. Bake in the preheated oven for about 20-25 minutes, or until a skewer inserted into the center comes out clean.
  8. Allow to cool in the tins for a few minutes before transferring to a wire rack.
