Delightful mini cakes filled with dried fruits and warm spices, perfect for the festive season.
Ingredients

- 115 g Dried fruit, mixed
- 3 large Eggs
- 175 g Self-raising flour
- 2 tsp Ground mixed spice
- 175 g Light brown soft Sugar
- 2 tbsp Brandy or orange juice
- 175 g Butter
Instructions
- Preheat the oven to 160°C (140°C fan)/320°F. Grease and line the mini cake tins.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one by one, mixing well after each addition.
- Fold in the self-raising flour and mixed spices.
- Stir in the dried fruit and brandy (or orange juice).
- Divide the mixture evenly among the prepared cake tins.
- Bake in the preheated oven for about 20-25 minutes, or until a skewer inserted into the center comes out clean.
- Allow to cool in the tins for a few minutes before transferring to a wire rack.
