Description

Delightful cookies that capture the essence of hot cocoa with melted marshmallows inside for a warm, gooey treat.


Ingredients

  • 1 large Egg
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 cup Brown sugar, packed light or dark
  • 1/4 cup dry hot Cocoa mix
  • 1/3 cup natural unsweetened Cocoa powder
  • 1/2 cup Granulated sugar
  • 1/8 tsp Salt
  • 8 oz Semi-sweet chocolate
  • 1 tsp pure Vanilla extract
  • 1 cup unsalted butter
  • 2 tsp Milk
  • 10 large Marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking soda, dry cocoa mix, natural cocoa powder, and salt. Gradually add to the butter mixture, stirring until well combined.
  5. Stir in melted semi-sweet chocolate until the dough is uniform.
  6. Shape the dough into balls and place them on a baking sheet lined with parchment paper. Flatten each ball slightly.
  7. Place one marshmallow in the center of each cookie and cover with a bit of dough.
  8. Bake for about 10-12 minutes, or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Use room temperature butter for better texture. Fresh marshmallows yield gooier centers. Chill the dough if too sticky.
