Delightful cookies that capture the essence of hot cocoa with melted marshmallows inside for a warm, gooey treat.

- 1 large Egg
- 1 1/2 cups All-purpose flour
- 1 tsp Baking soda
- 1/2 cup Brown sugar, packed light or dark
- 1/4 cup dry hot Cocoa mix
- 1/3 cup natural unsweetened Cocoa powder
- 1/2 cup Granulated sugar
- 1/8 tsp Salt
- 8 oz Semi-sweet chocolate
- 1 tsp pure Vanilla extract
- 1 cup unsalted butter
- 2 tsp Milk
- 10 large Marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking soda, dry cocoa mix, natural cocoa powder, and salt. Gradually add to the butter mixture, stirring until well combined.
- Stir in melted semi-sweet chocolate until the dough is uniform.
- Shape the dough into balls and place them on a baking sheet lined with parchment paper. Flatten each ball slightly.
- Place one marshmallow in the center of each cookie and cover with a bit of dough.
- Bake for about 10-12 minutes, or until the edges are set.
- Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Use room temperature butter for better texture. Fresh marshmallows yield gooier centers. Chill the dough if too sticky.
