- 1/2 cup Lemon curd
- 2 1/2 cups All-purpose flour
- 1/2 tsp Baking powder
- 1 cup Granulated sugar
- 1/4 tsp Salt
- 1/4 cup Turbinado sugar
- 1 tsp Vanilla extract
- 1 cup Unsalted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing well.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Scoop tablespoons of the cookie dough onto a baking sheet lined with parchment paper, leaving space between each.
- Make an indentation in the center of each cookie and fill it with lemon curd.
- Sprinkle turbinado sugar over the top of each cookie.
- Bake for 12-15 minutes or until the edges are golden.
- Let cool before serving.
