- 4 Chicken breasts, boneless skinless
- 1 tbsp Lemon, zest
- 4 Lemon, slices
- 1/4 cup Parsley, fresh
- 2 Eggs, large
- 1/2 cup Chicken broth
- 1/4 cup Lemon juice, fresh
- 1 cup All-purpose flour
- Salt and pepper to taste
- 1/4 cup Olive oil
- 1/3 cup Romano cheese, grated
- 1/4 cup White wine, dry
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish.
- In a shallow dish, combine the flour, salt, and pepper.
- In another dish, beat the eggs and add the lemon zest and lemon juice.
- Dip each chicken breast into the egg mixture, then coat it with the flour mixture.
- In a large skillet, heat olive oil over medium heat. Cook each chicken breast until golden brown, about 3-4 minutes per side.
- Transfer the chicken to the baking dish, top with Romano cheese, parsley, and lemon slices.
- Pour chicken broth and white wine around the chicken in the baking dish.
- Bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve warm with your choice of sides.
Notes
For best results, use room temperature chicken breasts and fresh lemon juice. Experiment with herbs for added flavor.
