Description

A delightful dish that combines crispy chicken with bright lemon flavor and creamy Romano cheese, perfect for family dinners or special occasions.


Ingredients

  • 4 Chicken breasts, boneless skinless
  • 1 tbsp Lemon, zest
  • 4 Lemon, slices
  • 1/4 cup Parsley, fresh
  • 2 Eggs, large
  • 1/2 cup Chicken broth
  • 1/4 cup Lemon juice, fresh
  • 1 cup All-purpose flour
  • Salt and pepper to taste
  • 1/4 cup Olive oil
  • 1/3 cup Romano cheese, grated
  • 1/4 cup White wine, dry

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish.
  2. In a shallow dish, combine the flour, salt, and pepper.
  3. In another dish, beat the eggs and add the lemon zest and lemon juice.
  4. Dip each chicken breast into the egg mixture, then coat it with the flour mixture.
  5. In a large skillet, heat olive oil over medium heat. Cook each chicken breast until golden brown, about 3-4 minutes per side.
  6. Transfer the chicken to the baking dish, top with Romano cheese, parsley, and lemon slices.
  7. Pour chicken broth and white wine around the chicken in the baking dish.
  8. Bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Serve warm with your choice of sides.

Notes

For best results, use room temperature chicken breasts and fresh lemon juice. Experiment with herbs for added flavor.
