- 1 cup Creamed corn
- 2 cups Fresh corn kernels or 1 can of corn, drained
- 1 cup Sour cream
- 2 large Eggs
- 1/2 cup Honey
- 1/2 cup Unsalted butter, melted
- 1 cup Cornmeal
- 1 tsp Baking powder
- 1/2 tsp Garlic powder
- 1/2 tsp Black pepper
- 1 tsp Salt
- 1 cup Cheddar cheese, shredded
- 1 Chives or parsley, for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large mixing bowl, stir together the creamed corn, fresh corn, and sour cream.
- In another bowl, whisk together the eggs, honey, and melted butter.
- Add the egg mixture to the corn mixture and stir to combine.
- In a separate bowl, combine cornmeal, baking powder, garlic powder, black pepper, and salt.
- Gradually add the dry mixture to the wet mixture until just combined.
- Fold in the cheddar cheese and chives or parsley.
- Pour the mixture into the greased baking dish and spread it out evenly.
- Bake for 45-50 minutes or until golden brown and set in the center.
- Allow to cool slightly before serving.
Notes
For best results, use room temperature ingredients. Experiment with different cheeses for variety.
