Delightful caramel thumbprint cookies that are crispy on the outside and soft and chewy inside, perfect for sharing and creating heartwarming memories.


Ingredients

  • 1 large Egg
  • 1 cup All-purpose flour
  • 1/3 cup Unsweetened baking cocoa
  • 12 oz Caramels
  • 1/2 cup Semisweet chocolate chips
  • 1/4 tsp Salt
  • 1 tsp Shortening
  • 2/3 cup Sugar
  • 1 tsp Vanilla extract
  • 1 cup Pecans
  • 1/2 cup Unsalted butter
  • 3 tbsp Heavy whipping cream
  • 2 tbsp Milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and sugar in a large bowl until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, mix the flour, cocoa, and salt together. Gradually add to the butter mixture.
  5. Roll the dough into small balls and place them on a baking sheet.
  6. Press your thumb into the center of each ball to create a well.
  7. In a small saucepan, melt the caramels with heavy cream and milk over low heat, stirring until smooth.
  8. Fill each thumbprint with the caramel mixture.
  9. Bake for 10-12 minutes or until cookies are set.
  10. Once cooled, drizzle melted chocolate chips over the top and sprinkle with chopped pecans.

Notes

For the best flavor, serve the cookies slightly warm or at room temperature. They pair well with milk or tea.
