- 3 ripe Bananas
- 1 1/2 tsp ground Ginger
- 2 large Eggs
- 1/4 cup Molasses
- 1 3/4 cups All-purpose flour
- 1/2 tsp Baking powder
- 1 tsp Baking soda
- 1/2 cup packed Brown sugar
- 1 tsp ground Cinnamon
- 1/4 tsp ground Cloves
- 1/4 tsp ground Nutmeg
- 1/2 tsp Salt
- 1 tsp Vanilla extract
- 1/2 cup Walnuts or pecans
- 1/3 cup Vegetable oil or melted unsalted butter
- 1/3 cup Crystallized ginger
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, mash the ripe bananas.
- Add the eggs, molasses, and vegetable oil (or melted butter), and stir until well combined.
- In a separate bowl, mix the all-purpose flour, baking powder, baking soda, brown sugar, ginger, cinnamon, cloves, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crystallized ginger and nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, consider adding chocolate chips or using different types of nuts. Store leftovers properly to keep them moist.
