Ingredients

  • 3 ripe Bananas
  • 1 1/2 tsp ground Ginger
  • 2 large Eggs
  • 1/4 cup Molasses
  • 1 3/4 cups All-purpose flour
  • 1/2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 cup packed Brown sugar
  • 1 tsp ground Cinnamon
  • 1/4 tsp ground Cloves
  • 1/4 tsp ground Nutmeg
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1/2 cup Walnuts or pecans
  • 1/3 cup Vegetable oil or melted unsalted butter
  • 1/3 cup Crystallized ginger

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the ripe bananas.
  3. Add the eggs, molasses, and vegetable oil (or melted butter), and stir until well combined.
  4. In a separate bowl, mix the all-purpose flour, baking powder, baking soda, brown sugar, ginger, cinnamon, cloves, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crystallized ginger and nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, consider adding chocolate chips or using different types of nuts. Store leftovers properly to keep them moist.
