A delightful and visually stunning Black Forest Cake Roll made with a fluffy chocolate sponge, whipped cream, and juicy cherries.

- 1/2 cup Cherries, fresh or jarred
- 1 whole Cherry for decoration
- 2 tbsp Kirsch or cherry liquor
- 4 large Eggs
- 1/2 cup All-purpose flour
- 1 tsp Baking powder
- 1/4 cup Cocoa powder, unsweetened
- 4 oz Dark or semi-sweet chocolate
- 3/4 cup Granulated sugar
- 4 tbsp Powdered sugar
- 1/4 tsp Salt
- 2 tsp Vanilla extract
- 1 cup Whipped cream (for filling)
- 1 tbsp Butter
- 1/2 cup Heavy cream (for ganache)
- 1 cup Heavy whipping cream (for whipping)
- Chocolate curls or shavings (for decoration)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat the eggs and sugar until light and fluffy.
- Sift together the flour, cocoa powder, baking powder, and salt.
- Gradually fold the sifted dry ingredients into the egg mixture.
- Pour the batter into the prepared baking sheet and spread it evenly.
- Bake for 10-12 minutes or until the cake feels springy to touch.
- Turn the cake out onto a clean towel dusted with powdered sugar and roll it up gently.
- Let the cake cool while rolled up in the towel.
- Prepare the filling by whipping the heavy cream until stiff peaks form and fold in the Kirsch and vanilla extract.
- Unroll the cooled cake and spread the whipped cream evenly over the surface, adding the cherries.
- Roll the cake back up and coat it with chocolate ganache made by heating heavy cream and stirring it into chopped chocolate.
- Decorate with chocolate curls and a cherry on top, then refrigerate until set.
- Slice and serve.
