Description

A delightful and visually stunning Black Forest Cake Roll made with a fluffy chocolate sponge, whipped cream, and juicy cherries.


Ingredients

  • 1/2 cup Cherries, fresh or jarred
  • 1 whole Cherry for decoration
  • 2 tbsp Kirsch or cherry liquor
  • 4 large Eggs
  • 1/2 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/4 cup Cocoa powder, unsweetened
  • 4 oz Dark or semi-sweet chocolate
  • 3/4 cup Granulated sugar
  • 4 tbsp Powdered sugar
  • 1/4 tsp Salt
  • 2 tsp Vanilla extract
  • 1 cup Whipped cream (for filling)
  • 1 tbsp Butter
  • 1/2 cup Heavy cream (for ganache)
  • 1 cup Heavy whipping cream (for whipping)
  • Chocolate curls or shavings (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Sift together the flour, cocoa powder, baking powder, and salt.
  4. Gradually fold the sifted dry ingredients into the egg mixture.
  5. Pour the batter into the prepared baking sheet and spread it evenly.
  6. Bake for 10-12 minutes or until the cake feels springy to touch.
  7. Turn the cake out onto a clean towel dusted with powdered sugar and roll it up gently.
  8. Let the cake cool while rolled up in the towel.
  9. Prepare the filling by whipping the heavy cream until stiff peaks form and fold in the Kirsch and vanilla extract.
  10. Unroll the cooled cake and spread the whipped cream evenly over the surface, adding the cherries.
  11. Roll the cake back up and coat it with chocolate ganache made by heating heavy cream and stirring it into chopped chocolate.
  12. Decorate with chocolate curls and a cherry on top, then refrigerate until set.
  13. Slice and serve.
