  • 4 cloves Garlic, minced
  • 1 small Onion, chopped
  • 1 tbsp Parsley, chopped
  • 2 cups Fresh Spinach, wilted
  • 1 large Egg
  • 1 tbsp Italian seasoning
  • 1/2 tsp Red pepper flakes
  • 1 tsp Salt
  • 1 cup Breadcrumbs
  • 8 oz Low-moisture mozzarella, sliced
  • 1/2 cup Grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef or turkey, minced garlic, chopped onion, parsley, spinach, egg, Italian seasoning, red pepper flakes, salt, and breadcrumbs. Mix until just combined.
  3. Form the mixture into uniform meatballs and place them on a baking sheet lined with parchment paper.
  4. Top each meatball with a slice of mozzarella cheese.
  5. Bake for about 20-25 minutes or until cooked through and cheese is bubbly.
  6. Sprinkle with grated Parmesan cheese before serving.
