- 1 lb Ground beef or turkey
- 4 cloves Garlic, minced
- 1 small Onion, chopped
- 1 tbsp Parsley, chopped
- 2 cups Fresh Spinach, wilted
- 1 large Egg
- 1 tbsp Italian seasoning
- 1/2 tsp Red pepper flakes
- 1 tsp Salt
- 1 cup Breadcrumbs
- 8 oz Low-moisture mozzarella, sliced
- 1/2 cup Grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef or turkey, minced garlic, chopped onion, parsley, spinach, egg, Italian seasoning, red pepper flakes, salt, and breadcrumbs. Mix until just combined.
- Form the mixture into uniform meatballs and place them on a baking sheet lined with parchment paper.
- Top each meatball with a slice of mozzarella cheese.
- Bake for about 20-25 minutes or until cooked through and cheese is bubbly.
- Sprinkle with grated Parmesan cheese before serving.
Notes
For a healthier option, consider sautéing the spinach first. Adjust seasonings to taste, especially the amount of red pepper flakes for spice preference.
