Ingredients

  • 1 1/2 cups creamy peanut butter
  • 2 cups powdered sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp shortening or refined coconut oil
  • 16 oz semi-sweet chocolate chips or melting wafers
  • 1/2 cup unsalted butter

Instructions

  1. In a mixing bowl, combine peanut butter, powdered sugar, vanilla extract, and shortening (or coconut oil). Mix until well combined.
  2. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Freeze for about 30 minutes until firm.
  4. In a double boiler, melt the semi-sweet chocolate chips with the butter until smooth.
  5. Dip each peanut butter ball into the chocolate mixture, covering completely, and place back on the parchment paper.
