- 1 1/2 cups creamy peanut butter
- 2 cups powdered sugar
- 1 tsp pure vanilla extract
- 2 tbsp shortening or refined coconut oil
- 16 oz semi-sweet chocolate chips or melting wafers
- 1/2 cup unsalted butter
Instructions
- In a mixing bowl, combine peanut butter, powdered sugar, vanilla extract, and shortening (or coconut oil). Mix until well combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze for about 30 minutes until firm.
- In a double boiler, melt the semi-sweet chocolate chips with the butter until smooth.
- Dip each peanut butter ball into the chocolate mixture, covering completely, and place back on the parchment paper.
- Allow to set until the chocolate hardens. Enjoy your holiday treats!
