- 4 large eggs
- 1 tsp lemon juice
- 1/2 cup strawberry or raspberry jam
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp cocoa powder
- 1 cup dark chocolate chips
- 1 frosting
- 1 tbsp red gel food coloring
- 4 cups powdered sugar
- 1 tsp salt
- 2 cups sugar
- 5 tsp vanilla
- 1 cup vegetable oil
- 1 tsp white vinegar
- 2 cups chocolate cookie crumbs
- 1 1/2 cups unsalted butter
- 1 1/2 cups buttermilk
- 32 oz cream cheese
- 1/2 cup sour cream or heavy cream
- 2 tbsp water
- red velvet crumbs from cake trimming
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour the cake pans.
- In a large bowl, mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the eggs, sugar, vegetable oil, buttermilk, vanilla, lemon juice, and vinegar.
- Gradually add the wet ingredients to the dry ingredients until combined.
- Mix in red gel food coloring and fold in the dark chocolate chips.
- Divide the batter into prepared cake pans and bake for 25-30 minutes.
- Let the cakes cool completely.
- Prepare the cheesecake layer by beating the cream cheese, sugar, and sour cream until smooth.
- Once the cakes are cooled, layer them with cheesecake filling, using jam in between if desired.
- Frost the cake with your choice of frosting and garnish with red velvet crumbs.
Notes
For best texture, ensure all ingredients are at room temperature before mixing. Consider chilling the cheesecake filling for easier layering.
