- 4 large eggs
- 1 tsp lemon juice
- 1/2 cup strawberry or raspberry jam
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp cocoa powder
- 1 cup dark chocolate chips
- 1 tub frosting
- 1 tbsp red gel food coloring
- 4 cups powdered sugar
- 1 tsp salt
- 2 cups sugar
- 5 tsp vanilla extract
- 1 cup vegetable oil
- 1 tsp white vinegar
- 2 cups chocolate cookie crumbs
- 1 1/2 cups unsalted butter
- 1 1/2 cups buttermilk
- 32 oz cream cheese
- 1/2 cup sour cream or heavy cream
- 2 tbsp water
- Red velvet crumbs (from cake trimming)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour cake pans.
- In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Mix well.
- In another bowl, beat together the eggs, sugar, vegetable oil, buttermilk, vanilla, lemon juice, and vinegar until smooth.
- Gradually mix the dry ingredients into the wet ingredients. Add red gel food coloring and mix until incorporated.
- Divide the batter into prepared cake pans and bake for about 25 minutes or until a toothpick comes out clean.
- Allow cakes to cool completely.
- For the cheesecake layer, beat together cream cheese, powdered sugar, sour cream, and vanilla until smooth.
- Assemble the cake by layering red velvet cake, cheesecake, and frosting in between.
- Top with frosting and decorate with chocolate chips and red velvet crumbs.
- Chill before serving.
