- 1 Egg yolk
- 1/4 cup Molasses
- 1 1/2 cups All-purpose flour
- 1/2 tsp Baking soda
- 3/8 cup Brown sugar

- 1 Cocoa powder
- 3 drops Gel food coloring, brown
- 1 Pinch Nutmeg
- 1/4 tsp Salt
- 1/2 cup Sugar
- 1/2 tsp Vanilla extract
- 2/3 cup White chocolate
- 1 Gingerbread cookies, Mini
- 1/4 cup Espresso or coffee, strong
- 6 tbsp Butter, unsalted
- 1/3 cup Condensed milk, sweetened
- 1 cup Heavy cream
- 1/4 cup Mascarpone
- 2 1/2 tsp Gelatin, powdered
- 8 tbsp Water
- Edible glitter or gold leaf (optional)
Instructions
- In a bowl, whisk together the ground ginger, molasses, egg yolk, brown sugar, and butter until smooth.
- In another bowl, sift together the all-purpose flour, baking soda, ground cinnamon, cloves, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture and combine well.
- Melt the white chocolate and mix it into the batter.
- Dissolve the gelatin in warm water and add to the mixture along with the espresso or strong coffee.
- In a separate bowl, whip the heavy cream and mascarpone until soft peaks form, then gently fold into the chocolate mixture.
- Pour the mousse mixture into silicone dome molds and refrigerate for about 6 hours until set.
- Once set, carefully remove the mousse domes from the molds and place them on a serving tray.
- Decorate with mini gingerbread cookies, edible glitter, or gold leaf if desired. Serve chilled.
Notes
Ensure to refrigerate the mousse for at least six hours for best texture. Consider using individual jars for fun servings.
