Ingredients

  • 2 Live lobsters
  • 1 cup Cremini mushrooms
  • 2 tbsp Parsley, fresh
  • 2 Shallots
  • 1 tsp Paprika
  • Salt and pepper to taste
  • 4 tbsp Butter, unsalted
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese
  • 1/2 cup White wine, dry

Instructions

  1. Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes until they are bright red. Remove and cool.
  2. Once cooled, remove the lobster meat from the shells and chop it into bite-sized pieces.
  3. In a skillet, melt the butter over medium heat. Add the shallots and mushrooms, cooking until softened.
  4. Stir in the lobster meat, paprika, salt, and pepper.
  5. Pour in the white wine and let it reduce by half.
  6. Add the heavy cream and Parmesan cheese, stirring until combined and bubbly.
  7. Pour the mixture into the lobster shells, topping them with additional cheese if desired.
  8. Place under the broiler until the cheese is golden and bubbly, about 2-3 minutes.
  9. Garnish with fresh parsley and serve immediately.
