- 2 Live lobsters
- 1 cup Cremini mushrooms
- 2 tbsp Parsley, fresh
- 2 Shallots
- 1 tsp Paprika
- Salt and pepper to taste
- 4 tbsp Butter, unsalted
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- 1/2 cup White wine, dry
Instructions
- Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes until they are bright red. Remove and cool.
- Once cooled, remove the lobster meat from the shells and chop it into bite-sized pieces.
- In a skillet, melt the butter over medium heat. Add the shallots and mushrooms, cooking until softened.
- Stir in the lobster meat, paprika, salt, and pepper.
- Pour in the white wine and let it reduce by half.
- Add the heavy cream and Parmesan cheese, stirring until combined and bubbly.
- Pour the mixture into the lobster shells, topping them with additional cheese if desired.
- Place under the broiler until the cheese is golden and bubbly, about 2-3 minutes.
- Garnish with fresh parsley and serve immediately.
