- 1 pound salmon fillets
- 1 cup bread crumbs
- 1/2 cup flour
- 1 egg, beaten
- Oil for frying
- 2 cups cooked rice
- Bang Bang sauce (1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 1 tablespoon sriracha, juice of 1 lime)
- Green onions for garnish (optional)
Instructions
- Preheat oil in a frying pan over medium-high heat.
- Cut salmon into bite-sized pieces.
- Set up a breading station with flour, beaten egg, and breadcrumbs.
- Dip each salmon piece first in flour, then egg, and finally breadcrumbs.
- Carefully fry the salmon bites in hot oil until golden brown and cooked through.
- Cook rice according to package instructions.
- To serve warm, place rice in a bowl, add salmon bites on top, and drizzle with Bang Bang sauce.
- Garnish with green onions if desired.
- For a cold option, allow to cool and serve as a poke bowl.
Notes
Use cold salmon for better texture. Don’t overcrowd the pan when frying for the crispiest bites.
