Description

Deliciously moist muffins made with fresh cranberries, orange zest, and crunchy pecans, perfect for breakfast or snacks.


Ingredients

  • 3/4 cup Cranberries, fresh or frozen
  • 1 tbsp Zest, orange
  • 1 Egg, large
  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Cinnamon, ground
  • 1 cup Granulated sugar
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1/2 cup Pecans, chopped
  • 3/4 cup Orange juice, freshly squeezed
  • 1/4 cup Butter, unsalted, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, sugar, and salt.
  3. In another bowl, whisk together the orange zest, egg, vanilla, orange juice, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cranberries and pecans.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.

Notes

Serve warm with butter or alongside yogurt and fresh fruit. Muffins can be frozen for longer storage.
