Ingredients

- 1/4 cup Cilantro
- 3 cloves Garlic, minced
- 1 tbsp Fresh Ginger, minced
- 1/4 cup Green onions, chopped
- 4 cups Chicken or vegetable broth
- 1 can Coconut milk
- 2 tbsp Fresh Lime juice
- 2 tbsp Soy sauce
- 12 pieces Potstickers (homemade or frozen)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add minced garlic and ginger, and sauté until fragrant.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Stir in the coconut milk, lime juice, and soy sauce, mixing well to combine all the flavors.
- Add the potstickers to the broth (following package instructions for frozen potstickers).
- Once the potstickers are cooked, stir in the chopped cilantro and green onions.
- Serve hot and enjoy your Cozy Thai Potsticker Soup!
Notes
Serve with crispy spring rolls or a salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
