Description

A heartwarming soup filled with potstickers, fragrant herbs, and spices that evokes memories of family and travel.


Ingredients

  • 1/4 cup Cilantro
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, minced
  • 1/4 cup Green onions, chopped
  • 4 cups Chicken or vegetable broth
  • 1 can Coconut milk
  • 2 tbsp Fresh Lime juice
  • 2 tbsp Soy sauce
  • 12 pieces Potstickers (homemade or frozen)

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add minced garlic and ginger, and sauté until fragrant.
  2. Pour in the chicken or vegetable broth and bring to a simmer.
  3. Stir in the coconut milk, lime juice, and soy sauce, mixing well to combine all the flavors.
  4. Add the potstickers to the broth (following package instructions for frozen potstickers).
  5. Once the potstickers are cooked, stir in the chopped cilantro and green onions.
  6. Serve hot and enjoy your Cozy Thai Potsticker Soup!

Notes

Serve with crispy spring rolls or a salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
