Description

A comforting and flavorful chicken noodle soup made with ginger, garlic, and tender chicken, perfect for chilly evenings.


Ingredients

  • 2 lb Chicken thighs, boneless skinless
  • 6 oz scallions (1 bundle)
  • 3 inches piece of ginger
  • 1 cup Carrot, sliced
  • 6 Garlic cloves, minced
  • 1/4 cup Soy sauce
  • 8 oz Ramen noodles or dried curly noodles
  • Freshly ground Black or white pepper
  • 1 tbsp Crispy chili oil
  • 4 tsp Kosher salt
  • 1/4 cup Black rice vinegar
  • 2 tbsp Sesame oil, toasted
  • 10 cups Water

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the ginger and garlic, then sauté until fragrant.
  3. Add the chicken thighs and cook until lightly browned.
  4. Pour in the water and bring to a boil.
  5. Reduce the heat, then add the soy sauce, black rice vinegar, and kosher salt. Simmer for about 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Add the carrots and scallions, then stir in the ramen noodles. Cook until tender, about 4 to 5 minutes.
  8. Season with freshly ground pepper and crispy chili oil before serving.

Notes

Use fresh ingredients for best flavor. Adjust cooking times for noodles based on brand.
