A comforting and flavorful chicken noodle soup made with ginger, garlic, and tender chicken, perfect for chilly evenings.
Ingredients

- 2 lb Chicken thighs, boneless skinless
- 6 oz scallions (1 bundle)
- 3 inches piece of ginger
- 1 cup Carrot, sliced
- 6 Garlic cloves, minced
- 1/4 cup Soy sauce
- 8 oz Ramen noodles or dried curly noodles
- Freshly ground Black or white pepper
- 1 tbsp Crispy chili oil
- 4 tsp Kosher salt
- 1/4 cup Black rice vinegar
- 2 tbsp Sesame oil, toasted
- 10 cups Water
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the ginger and garlic, then sauté until fragrant.
- Add the chicken thighs and cook until lightly browned.
- Pour in the water and bring to a boil.
- Reduce the heat, then add the soy sauce, black rice vinegar, and kosher salt. Simmer for about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add the carrots and scallions, then stir in the ramen noodles. Cook until tender, about 4 to 5 minutes.
- Season with freshly ground pepper and crispy chili oil before serving.
Notes
Use fresh ingredients for best flavor. Adjust cooking times for noodles based on brand.
