Delicious and festive macarons that capture the essence of the holiday spirit with almond cookies and creamy filling.
Ingredients

- 3 large Egg whites (about 90g)
- 1 cup finely ground Almond flour
- 1/2 tsp Cream of tartar
- 1 Green Gel food coloring
- 1/4 cup Granulated sugar
- 3 1/4 cups Powdered sugar
- 1 pinch Salt
- Red and green sprinkles
- 1/2 tsp Vanilla extract
- White chocolate drizzle
- 1/2 cup Snack cakes
- 1/2 cup unsalted Butter
- 2 tbsp Heavy cream
- Edible gold stars (optional, for decoration)
Instructions
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a clean bowl, whip the egg whites until frothy. Add cream of tartar and continue to whip until soft peaks form.
- Gradually add granulated sugar while whipping until stiff peaks form and mixture is glossy. Add green gel food coloring until desired color is achieved.
- Sift together almond flour, powdered sugar, and salt into the egg mixture. Gently fold until combined.
- Pipe the mixture into small circles on the prepared baking sheets. Tap the sheets to release air bubbles and let them sit for 30-60 minutes until they form a skin.
- Bake for 15-18 minutes, or until macarons don’t stick to parchment paper. Let cool completely.
- For the filling, beat unsalted butter until creamy, then mix in snack cakes, vanilla extract, heavy cream, and powdered sugar until smooth.
- Fill half of the macaron shells with filling and sandwich with the other half.
- Drizzle with white chocolate and decorate with red and green sprinkles and edible gold stars if desired.
- Let the filled macarons sit for a few hours before serving to develop flavors.
Notes
For best flavor, pair macarons with hot cocoa or spiced tea. Store in an airtight container in the refrigerator for up to 5 days.
