- 4 cups Baby spinach or mixed greens
- 1 cup fresh Cranberries
- 1 cup fresh Pomegranate seeds
- 1/4 cup Red onion
- 2 tbsp Dijon mustard
- 2 tbsp Honey
- Salt and pepper to taste
- 1 tbsp Apple cider vinegar
- 1/4 cup Olive oil
- 1/2 cup Candied pecans or walnuts
- 1/2 cup Feta cheese
Instructions
- In a large bowl, combine the baby spinach or mixed greens, diced apple, cranberries, pomegranate seeds, and sliced red onion.
- In a separate small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, salt, and pepper until smooth.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Top with candied pecans or walnuts and crumbled feta cheese before serving.
