Description
A delightful cheesecake layered with tart cranberry jam and topped with light white chocolate mousse, perfect for holiday gatherings.

- 24 oz fresh Cranberries
- 2 Eggs
- 8 oz Baking white chocolate bars
- 1/4 cup Brown sugar
- 2 tbsp Corn starch
- 1 1/2 cup Granulated sugar, white
- 2 cups Sugar
- 8 oz Whipped topping (Cool Whip)
- 1 1/4 tbsp Vanilla extract
- 1 Vanilla bean
- 1 1/2 cups Graham cracker crumbs
- 5 tbsp Butter
- 32 oz Cream cheese
- 3/4 cup Heavy whipping cream
- 2 tbsp Sour cream
- 1 1/2 cups Water
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse the graham cracker crumbs and butter together until well combined. Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and brown sugar, mixing until combined. Add in the eggs, sour cream, vanilla, and vanilla beans, mixing until smooth.
- Pour the cream cheese mixture over the crust in the springform pan.
- For the cranberry jam, simmer fresh cranberries with water and sugar until the berries burst and the mixture thickens. Allow to cool.
- After the cheesecake has baked for about 50–60 minutes, let it cool completely before spreading the cranberry jam over the top.
- In a separate bowl, melt the white chocolate and let it cool slightly. In another bowl, whip the heavy cream until soft peaks form. Fold the cooled white chocolate into the whipped cream.
- Spread the white chocolate mousse over the cranberry layer.
- Refrigerate the cheesecake for at least 8 hours before serving.
- Top with whipped topping before serving if desired.
Notes
For best results, allow the cheesecake to sit in the refrigerator for at least 8 hours before serving to let the flavors meld.
