- 2 Egg yolks
- 1/4 cup Cherry preserves
- 1 1/2 cups All-purpose flour
- 1/2 tsp Baking powder
- 3/4 cup Brown sugar, light packed
- 5 oz Chocolate
- 1/2 cup Cocoa powder, Dutch-process
- 1/2 tsp Sea salt
- 1 1/2 tsp Vanilla extract
- 1/4 cup White sugar, granulated
- 3/4 cup Butter, unsalted
- 3/8 cup Heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the unsalted butter, brown sugar, and white sugar until light and fluffy.
- Add the egg yolks and vanilla extract; mix until combined.
- In another bowl, combine flour, cocoa powder, baking powder, and sea salt; gradually add to wet mixture.
- Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
- Create an indent in the center of each cookie for the cherry ganache.
- Bake for 10-12 minutes until the edges are firm but centers remain soft.
- Melt the chocolate and heavy cream in a saucepan, stirring in cherry preserves until smooth.
- Fill each cookie’s indent with the chocolate cherry ganache.
- Let cool and enjoy.
Notes
Chill the dough if too soft for easier handling. Use room temperature ingredients for better texture.
