Description

Delightful cookies combining rich chocolate and sweet-tart cherry preserves for a warm, inviting treat.


Ingredients

  • 2 Egg yolks
  • 1/4 cup Cherry preserves
  • 1 1/2 cups All-purpose flour
  • 1/2 tsp Baking powder
  • 3/4 cup Brown sugar, light packed
  • 5 oz Chocolate
  • 1/2 cup Cocoa powder, Dutch-process
  • 1/2 tsp Sea salt
  • 1 1/2 tsp Vanilla extract
  • 1/4 cup White sugar, granulated
  • 3/4 cup Butter, unsalted
  • 3/8 cup Heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the unsalted butter, brown sugar, and white sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract; mix until combined.
  4. In another bowl, combine flour, cocoa powder, baking powder, and sea salt; gradually add to wet mixture.
  5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Create an indent in the center of each cookie for the cherry ganache.
  7. Bake for 10-12 minutes until the edges are firm but centers remain soft.
  8. Melt the chocolate and heavy cream in a saucepan, stirring in cherry preserves until smooth.
  9. Fill each cookie’s indent with the chocolate cherry ganache.
  10. Let cool and enjoy.

Notes

Chill the dough if too soft for easier handling. Use room temperature ingredients for better texture.
