Description

Delicious and moist Carrot Cake Bars filled with warm spices and sweet carrots, reminiscent of cherished family memories.


Ingredients

  • 2 cups Carrots, grated
  • 2 large Eggs
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 cup Brown sugar
  • 1 tsp Ground cinnamon
  • 1 cup Granulated sugar
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Salt
  • 1/2 cup Walnuts or pecans, chopped
  • 1/2 cup Vegetable oil or melted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the grated carrots, eggs, brown sugar, granulated sugar, and vegetable oil or melted butter until well combined.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the walnuts or pecans.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before cutting into bars and serving.

Notes

For best flavor, serve at room temperature and consider dusting with powdered sugar. They pair well with vanilla ice cream or whipped cream.
