Description

A vibrant summer dish featuring fresh basil, creamy mozzarella, and cherry tomatoes, drizzled with balsamic glaze.


Ingredients

  • 1/4 cup fresh basil leaves
  • 1 pint grape or cherry tomatoes
  • 12 oz pasta
  • 2 tbsp balsamic glaze
  • Salt and freshly ground black pepper to taste
  • 1/4 cup extra virgin olive oil
  • 8 oz fresh mozzarella balls

Instructions

  1. Cook the pasta until al dente according to package directions. Drain and let cool slightly.
  2. In a large bowl, combine the cooked pasta with fresh mozzarella balls, grape or cherry tomatoes, and fresh basil leaves.
  3. Drizzle with extra virgin olive oil and balsamic glaze. Season with salt and black pepper to taste.
  4. Toss gently to combine all ingredients.
  5. Serve chilled or at room temperature.

Notes

For added crunch, consider adding toasted pine nuts. Best served chilled after refrigerating for about 30 minutes before serving.
