Ingredients

  • 4 Garlic cloves, minced
  • 1 small Onion, chopped
  • 1 tbsp fresh Parsley, chopped
  • 4 large Potatoes, peeled and diced
  • 4 cups Vegetable broth
  • 1/4 tsp freshly ground Black pepper
  • 1 tsp Salt
  • 2 tbsp extra virgin Olive oil
  • Croutons
  • Grated Cheese

Instructions

  1. Heat the extra virgin olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic cloves, cooking until soft.
  3. Stir in the peeled and diced potatoes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat and let the soup simmer until the potatoes are tender (about 20 minutes).
  6. Add salt, pepper, and roasted garlic, then blend until smooth and creamy.
  7. Serve hot, garnished with fresh parsley, croutons, and grated cheese.
