- 1 large head Garlic, roasted
- 4 Garlic cloves, minced
- 1 small Onion, chopped
- 1 tbsp fresh Parsley, chopped
- 4 large Potatoes, peeled and diced
- 4 cups Vegetable broth
- 1/4 tsp freshly ground Black pepper
- 1 tsp Salt
- 2 tbsp extra virgin Olive oil
- Croutons
- Grated Cheese
Instructions
- Heat the extra virgin olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic cloves, cooking until soft.
- Stir in the peeled and diced potatoes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let the soup simmer until the potatoes are tender (about 20 minutes).
- Add salt, pepper, and roasted garlic, then blend until smooth and creamy.
- Serve hot, garnished with fresh parsley, croutons, and grated cheese.
