- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup fresh raspberries (or frozen)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- ½ cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.
- In a separate bowl, mix the flour, rolled oats, baking powder, and salt.
- Gradually add the dry mixture to the butter-sugar mixture, mixing until just combined.
- Stir in the lemon juice and vanilla extract.
- Gently fold in the raspberries.
- In another bowl, combine brown sugar, rolled oats, and chopped nuts (if using) for the crumble topping.
- Drop spoonfuls of dough onto a lined baking sheet, spacing them 2 inches apart and top with crumble.
- Bake for 12–15 minutes until edges are golden brown.
- Let cookies cool on the baking sheet before transferring to a wire rack.
Notes
Serve warm with powdered sugar or a scoop of vanilla ice cream for a delightful dessert.
