Description

A delightful salad featuring crisp apples, peppery arugula, and maple-glazed pecans, perfect for any occasion.


Ingredients

  • 3 Apples, very thinly sliced
  • 5 oz Arugula
  • 1/2 cup Figs, sliced
  • 1 Garlic clove, minced
  • 1/4 cup Red onion, thinly sliced
  • 3 tbsp Balsamic vinegar
  • 1 1/2 tsp Dijon mustard
  • 1 tsp Lemon juice
  • 2 2/3 tbsp Maple syrup
  • 1/2 tsp Pepper
  • 1 pinch Sea salt
  • 1/4 tsp Sea salt
  • 1/2 cup Olive oil
  • 1 cup Pecan halves
  • 1/2 cup Goat cheese crumbles

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the pecans on a baking sheet and roast for about 8-10 minutes until toasted.
  2. In a large bowl, combine the arugula, thinly sliced apples, figs, and red onion. Toss gently.
  3. In a small bowl, whisk together balsamic vinegar, Dijon mustard, lemon juice, maple syrup, olive oil, minced garlic, pepper, and sea salt.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Top the salad with roasted pecans and goat cheese crumbles.
  6. Serve immediately and enjoy!

Notes

To keep the greens fresh, add the dressing just before serving.
