A delightful salad featuring crisp apples, peppery arugula, and maple-glazed pecans, perfect for any occasion.
Ingredients

- 3 Apples, very thinly sliced
- 5 oz Arugula
- 1/2 cup Figs, sliced
- 1 Garlic clove, minced
- 1/4 cup Red onion, thinly sliced
- 3 tbsp Balsamic vinegar
- 1 1/2 tsp Dijon mustard
- 1 tsp Lemon juice
- 2 2/3 tbsp Maple syrup
- 1/2 tsp Pepper
- 1 pinch Sea salt
- 1/4 tsp Sea salt
- 1/2 cup Olive oil
- 1 cup Pecan halves
- 1/2 cup Goat cheese crumbles
Instructions
- Preheat the oven to 350°F (175°C). Spread the pecans on a baking sheet and roast for about 8-10 minutes until toasted.
- In a large bowl, combine the arugula, thinly sliced apples, figs, and red onion. Toss gently.
- In a small bowl, whisk together balsamic vinegar, Dijon mustard, lemon juice, maple syrup, olive oil, minced garlic, pepper, and sea salt.
- Drizzle the dressing over the salad and toss gently to combine.
- Top the salad with roasted pecans and goat cheese crumbles.
- Serve immediately and enjoy!
Notes
To keep the greens fresh, add the dressing just before serving.
